This special occasion worthy dish features a succulent chicken breast wrapped in crispy prosciutto ham, elegantly arranged on a bed of creamy fettuccine.

  • 1 tbsp olive oil
  • 2 chicken breasts, cut in half lengthwise to make 4 cutlets
  • 1 lemon, zest only
  • 2 tbsp grated Parmesan cheese
  • 4-8 prosciutto slices (Parma ham), depending on width

  • 3 tbsp butter
  • 500ml / 2 cups double / heavy cream
  • 120g / 1 1/4 cup freshly grated Parmesan cheese
  • 1 pinch grated nutmeg
  • Salt to taste
  • 450g/1lb fettuccine

Instructions

  1. Cut the chicken breasts in half lengthwise, creating 4 cutlets. Place them on a cutting board, sprinkle one side with grated Parmesan and lemon zest, then wrap each chicken cutlet with 1 or 2 slices of prosciutto. The number of prosciutto slices needed will depend on the size of the chicken breasts and the width of the prosciutto. Set aside.
  2. Begin cooking the fettuccine in a large pot of generously salted water according to package instructions until al dente.
  3. While the pasta cooks, heat 1 tbsp of olive oil in a large frying pan over medium-high heat. Pan-fry the prosciutto-wrapped chicken breasts for 5 minutes on one side (seam-side down first to help seal the prosciutto). Flip them over and cook for an additional 3-4 minutes, or until the chicken is fully cooked through and the prosciutto is crispy. If unsure, check the internal temperature of the thickest part of the chicken; it should read 74°C (165°F). Remove the chicken from the pan and let it rest while you prepare the sauce and finish the pasta.
  4. Lower the heat to low and carefully wipe the frying pan clean with a paper towel. Add the butter to the pan and allow it to melt completely.
