  • 1 onion, small, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil, extra virgin
  • 2 cups/400g Arborio rice
  • 1/4 cup/75ml dry white wine, such as Sauvignon Blanc or Pinot Grigio
  • 5 cups/ 1.25 litre vegetable or chicken stock
  • 15 spears asparagus, chopped, tips reserved
  • 1 cup/100g Parmesan cheese, grated
  • 2 tbsp butter
  • salt , to taste
  • micro herbs , optional

Instructions

  • Put the stock in a pot and bring it to a boil. Wash the asparagus and cut off the tips, cut the rest of the stalks crosswise into 1 cm pieces. Chop up onion and garlic and cook them in olive oil in a large deep pan over low heat for 7-10 minutes until softened and translucent.
  • Turn the heat to medium and add the Arborio rice. Fry the rice, stirring constantly, for 2-3 minutes until the edges of the grains become translucent. Pour in the dry white wine and continue stirring until the wine has completely evaporated, leaving its fragrant essence in the rice.
  • Add 1 cup of the hot stock, ensuring it just slightly covers the rice. Cook over low/medium heat, stirring occasionally, until the stock is almost fully absorbed by the rice. At this point, add the chopped asparagus stalks (reserving the delicate tips for later). Continue adding the hot stock one ladleful at a time, allowing each addition to be absorbed before adding the next. Stir for about 20-30 seconds after each addition of stock to help release the starch, ensuring a truly creamy risotto. This process will take approximately 20-30 minutes.
