Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cloves of garlic, minced
  • 4 skinless and boneless chicken thighs, cut into bite-sized pieces
  • 100g (1/4 cup) cured Spanish chorizo, chopped
  • 225g (1 cup) shrimp, peeled and deveined
  • 10g (1/4 cup) fresh flat leaf parsley, chopped, plus extra for garnish
  • 1/2 lemon, juice only
  • 185g (1 cup) paella rice (arroz redonda or bomba)
  • 500ml (2 cups) chicken stock
  • A generous pinch of saffron threads
  • 40g (1/4 cup) frozen peas
  • Salt to taste

Instructions

  1. Heat the olive oil in a large cast iron casserole dish or paella pan over medium heat. Add the chopped chorizo and cook for about 2 minutes, stirring occasionally, until it’s slightly browned and its flavorful orange oil is released into the pan.
