  • 2 stalks celery, chopped
  • 2 carrots, cut into large chunks
  • 2-3 cloves garlic, sliced
  • 1 tbsp fresh rosemary, chopped
  • 3 lbs / 1½ kg stew beef, such as shin or brisket, cut into cubes
  • 125ml / 1/2 cup dry red wine, such as Chianti
  • 500ml / 2 cups tomato passata, or crushed tomatoes
  • 235g / 1¼ cup cannellini beans, drained and rinsed
  • 6 canned or frozen artichoke hearts, halved
  • 90g / 1/2 cup olives
  • Salt to taste

Instructions

For the slow cooker

  • Chop onions, celery, and rosemary. Cut carrots into large chunks and slice garlic. Add all prepared vegetables, herbs, and garlic to the slow cooker. Top with beef cubes, seasoned with salt. Then, add the cannellini beans, halved artichoke hearts, and olives.
  • Pour over the crushed tomatoes (or tomato passata) and dry red wine. Mix all ingredients well to combine. Cook on the LOW setting for 8-10 hours, or on the HIGH setting for 4-5 hours, until the beef is fork-tender.

For the Instant Pot

  • Chop onions, celery, and rosemary. Cut carrots into large chunks and slice garlic. Add all prepared vegetables, herbs, and garlic to the Instant Pot. Top with beef cubes, seasoned with salt. Then, add the cannellini beans, halved artichoke hearts, and olives.
  • Pour over the crushed tomatoes (or tomato passata) and dry red wine. Mix well. Secure the lid and set the Instant Pot to cook at high pressure for 40 minutes. Allow for a natural pressure release for 10-15 minutes, then manually release any remaining pressure.
