  • 1 tbsp butter
  • 2 banana shallots, chopped
  • 650g / 23oz g mixed mushrooms, (portobello, shiitake, oyster, button)
  • 2 tbsp butter
  • Salt to taste
  • 2-3 thyme sprigs, leaves only
  • 1 bay leaf
  • 1 clove garlic
  • 4 tbsp cognac, (brandy)
  • 250g / 9oz cream cheese, full fat
  • Black or pink pepper to taste

Instructions

  • Melt a tablespoon of butter in a deep frying pan. Add the chopped shallots and sauté them over low heat for about 10 minutes until they become wonderfully soft and lightly caramelized. Then, stir in the minced garlic and cook for another 30 seconds, just until fragrant.
  • Add two more tablespoons of butter to the pan, along with the sliced mixed mushrooms, a pinch of salt, fresh thyme leaves, and the bay leaf. Cook the mushrooms, stirring occasionally, until all their liquid has evaporated and they are thoroughly cooked through and beginning to brown beautifully. Remove the pan from the heat and allow the mixture to cool completely, then discard the bay leaf.
  • Once the cooked mushrooms have cooled significantly, transfer them to a food processor. Pulse the mixture using the pulse button until it forms a rough, textured paste. Avoid over-processing if you prefer a pâté with some textural integrity.
  • To the food processor, add the cream cheese, brandy (if using), a pinch of salt, and either pink or black pepper.
