Ingredients
- 200g / 7 oz short pasta, cooked and cooled
- 2 small heads chicory (radicchio), core removed and sliced
- 8 baby zucchini (or 2 regular zucchini), grilled and sliced

Instructions
- Cook pasta according to package directions, drain, and cool. Meanwhile, halve baby zucchini lengthwise and grill or pan-fry for about 3 minutes per side; cool and slice. If using regular zucchini, cut into 1-inch slices.
- In a large bowl combine sliced chicory, red pepper, halved cherry tomatoes, cubed cheese, sliced olives, salami strips, sliced pepperoncini, thinly sliced shallot, the cooled zucchini, and the pasta.
- Make the dressing: combine chopped basil, lemon zest and juice, minced garlic, salt, and olive oil in a jar and shake well, or blend briefly until combined.
- Pour the dressing over the salad and toss to coat. Taste and adjust seasoning with additional salt if needed. Serve immediately.
