Diving Deeper into the Flavor Profile

The magic of this dish lies in its carefully selected blend of spices and ingenious cooking method. We start with a foundation of Basmati rice, chosen for its delicate aroma and fluffy texture, which is then infused with a vibrant mix of traditional Indian spices. Freshly grated ginger and minced garlic provide a pungent, aromatic base. Ground turmeric imparts its signature golden color and earthy notes, while coriander and cumin add warmth and depth. A touch of Kashmiri chili powder introduces a mild, smoky heat; if unavailable, sweet paprika makes an excellent substitute, offering color and a gentle warmth without intense spiciness. To enrich the rice, part of the cooking water is replaced with creamy coconut milk, adding a subtle sweetness and velvety texture that elevates the entire dish.

Once the aromatic rice base is simmering, it’s topped with beautifully browned chicken thighs. The initial searing of the chicken locks in moisture and creates a delicious crust, while the bone-in, skin-on cut ensures maximum flavor and juiciness as it bakes. The chicken finishes cooking directly on top of the rice, allowing its savory juices to drip down and further flavor every single grain. The result is a symphony of textures and tastes: incredibly creamy, fragrant rice, wonderfully tender chicken, and the sweet burst of green peas, all harmonizing in a single pan. The turmeric not only gives the rice its characteristic yellow hue but also contributes its anti-inflammatory properties, making this dish as wholesome as it is delicious.

Mastering Your One-Pan Creation: Expert Tips and Notes

Recipe Tips and Notes

  • Chicken Choice: This recipe calls for skin-on, bone-in chicken thighs because they yield the most flavorful and juicy results. The skin crisps up beautifully, and the bone adds depth to the overall taste. However, you can easily substitute with skinless, boneless chicken thighs for a quicker cooking time or even chicken breasts, though you might need to adjust the baking time slightly to prevent them from drying out. If using skin-on chicken, never skip the browning step – it’s crucial for achieving that desirable crispy texture and rendering out excess fat.
  • Spice Management: The blend of cumin, coriander, ginger, garlic, turmeric, and chili powder is key to this dish’s unique flavor. If you’re new to cooking with these individual spices or find yourself short on time, a high-quality, fresh curry powder can be a suitable shortcut. Replace the individual spices (ginger, garlic, turmeric, coriander, cumin, chili powder) with approximately 2 tablespoons of a good curry powder. While the flavor profile won’t be identical, it will still deliver a delicious, aromatic meal. Remember, “fresh” curry powder refers to one that hasn’t been sitting in your pantry for ages; spices lose their potency and aroma over time, even if they don’t spoil.
  • Vegetable Versatility: Frozen peas add a lovely pop of color and sweetness, but this recipe is incredibly adaptable. Feel free to swap them out or add other vegetables you enjoy. Green beans, broccoli florets, diced bell peppers, or even a handful of fresh spinach (stirred in at the end) would work wonderfully. Just ensure any harder vegetables are cut into small pieces to cook through evenly with the rice.
  • Rinsing the Rice: For truly fluffy Basmati rice, always rinse it thoroughly under cold running water until the water runs clear. This removes excess starch, preventing the rice from becoming gummy.
  • Coconut Milk vs. Water: The ratio of coconut milk to water is designed to create a creamy texture while still allowing the rice to cook perfectly. Using full-fat coconut milk will give you the richest flavor and texture.
  • The Importance of Browning: Don’t rush the browning of the chicken. A good sear creates depth of flavor and a beautiful golden-brown skin. This step also allows you to build a flavorful fond (caramelized bits) at the bottom of the pan, which will infuse into the rice as it cooks.
  • Don’t Peek!: Once the pot is covered and in the oven, resist the urge to lift the lid. Trapping the steam is essential for the rice to cook evenly and absorb all the liquid, resulting in perfectly fluffy grains.

Chicken thighs and yellow turmeric rice with green peas come together beautifully in this easy and delicious one pan dish.

Equipment

  • Cast iron casserole dish

Ingredients

  • 1 tbsp vegetable oil
  • 6 bone-in chicken thighs
  • Salt and pepper, to taste
  • 1 onion, chopped
  • 1 tbsp grated ginger
  • 3 cloves garlic, minced
  • 2 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp Kashmiri chilli powder, or 1 tsp paprika
  • 270g / 1 ½ cups basmati rice, rinsed
  • 2 tsp salt
  • 400ml / 1 ¾ cup water
  • 400ml / 14 oz coconut milk (full-fat recommended)
  • 140g / 1 cup frozen peas
  • 1 tbsp fresh cilantro/coriander, chopped, for garnish
  • 1 tbsp sliced green onions, for garnish

Instructions

  1. Preheat the oven to 350F/180C. Season the chicken thighs generously with salt and pepper. In a large, oven-safe pan (such as a cast iron casserole dish), heat the vegetable oil over high heat. Brown the chicken thighs on each side until golden, about 3-4 minutes per side. The chicken should not be cooked through at this stage. Remove the chicken to a plate and set aside.
  2. Reduce the heat to medium-low. Add the chopped onion and grated ginger to the same pan, cooking for about 5 minutes until the onion softens and becomes translucent. Then, add the minced garlic, ground turmeric, ground coriander, ground cumin, and the chili powder (or paprika). Cook for another minute, stirring continuously and scraping any flavorful bits from the bottom of the pan. This step blooms the spices, intensifying their aroma.
  3. Add the rinsed Basmati rice to the pan and stir for 1 minute, ensuring each grain is coated in the spice mixture. Pour in the water and coconut milk, add the remaining salt, and stir to combine. Finally, stir in the frozen peas. Increase the heat to high and bring the mixture to a vigorous boil.
  4. Carefully return the browned chicken thighs, along with any accumulated juices from the plate, to the pot, nestling them into the rice mixture. Cover the pan tightly with a lid and transfer it to the preheated oven. Bake for 30 minutes, or until the rice is completely cooked and all the liquid has been absorbed, resulting in light and fluffy grains. If, after 30 minutes, there is still liquid remaining, remove the lid and bake for an additional 10 minutes, or until the liquid has evaporated.
  5. Once done, remove from the oven and let it rest, covered, for 5-10 minutes before serving. This allows the rice to steam further and ensures optimal fluffiness. Serve hot, garnished generously with fresh chopped cilantro/coriander and sliced green onions for a burst of freshness.
