  • 4 kale leaves

Instructions

  • Slice the cabbage and shallot thinly and grate the carrots. (A mandoline works exceptionally well for this to achieve uniform thinness.) Remove the tough central rib from the kale leaves, discard them, and then slice the kale thinly. Before adding to the salad bowl, scrunch the sliced kale in your hands to soften its texture slightly. Cut the pomegranate open and carefully extract the seeds. Combine all these prepared ingredients in a large salad bowl.
  • For the vinaigrette, combine the lemon juice, pomegranate molasses, Dijon mustard, olive oil, and a pinch of salt in a mason jar.
