- 1 tsp vanilla extract
- 45g/1/4 cup dark chocolate, chopped
- 280g/2 cups plain flour/all purpose flour
- 150g/1 1/3 cup unsalted pistachios, chopped
- 125ml/1/2 cup blackberry or strawberry jam, I used both

In a large mixing bowl, cream together the room temperature unsalted butter, granulated sugar, cocoa powder, and salt using an electric mixer until the mixture is light, fluffy, and significantly paler in color. Next, beat in the large egg and vanilla extract until thoroughly combined.

Carefully melt the dark chocolate. You can do this using a double boiler, or in a microwave. If using a microwave, melt the chocolate in short 30-second bursts, stirring well after each one, until it’s smooth and fully melted. Be cautious, as chocolate can burn very quickly.
