As the festive season approaches, it’s always wise to have a repertoire of reliable party food recipes. This delightful appetizer is my latest contribution to your collection of festive bites and nibbles, guaranteed to be a hit at any gathering.

I originally developed this recipe a few years ago when hosting a Christmas party. My goal was simple: create something effortlessly elegant, a finger food that would make a statement without adding any stress to my already busy holiday schedule. These prosciutto-wrapped dates exceeded all expectations. They are incredibly simple yet burst with a complex flavour profile that’s both sweet and intensely savoury. The proof was in the pudding, or rather, on the platter – it was the first dish to be completely devoured!
The beauty of this appetizer lies in its balanced complexity. The natural caramel sweetness of the dates perfectly complements the salty, delicate Italian prosciutto, while the creamy herbed soft cheese adds a tangy, aromatic counterpoint. Each bite is a miniature explosion of flavour, truly capturing the opulent spirit of the holiday season.
Beyond their delightful taste, these stuffed dates are a dream for any host. They require minimal effort and zero cooking, making them an ideal choice for last-minute entertaining or when you simply want to enjoy your guests instead of being stuck in the kitchen. With just three core ingredients and a few minutes of assembly, you can create an appetizer that looks and tastes like it took hours of preparation.

The Art of Stuffed Dates: A Culinary Delight
Dates have been a cherished food for millennia, celebrated for their rich, sweet flavor and nutritional value. Medjool dates, in particular, are prized for their large size, soft, chewy texture, and deep caramel notes, making them the perfect candidate for stuffing. Their natural sweetness provides an exquisite contrast to savory fillings, transforming a simple fruit into a gourmet experience.
The concept of stuffing dates is ancient, with various cultures incorporating them into both sweet and savory dishes. In this recipe, the combination of a creamy, herbed cheese and salty prosciutto elevates the humble date to an entirely new level. It’s a testament to how simple ingredients, when thoughtfully combined, can create something truly extraordinary.
Selecting Your Ingredients for Perfect Prosciutto-Wrapped Dates
While the recipe is straightforward, choosing quality ingredients can make all the difference. Here’s a closer look at what to pick for the best results:
Dates: The Sweet Heart of the Appetizer
- Medjool Dates: These are highly recommended due to their generous size, plump flesh, and pronounced caramel flavor. They are naturally soft and sticky, which helps hold the filling and prosciutto in place.
- Pitting: Always ensure your dates are pitted. If you buy them with pits, a simple cut down one side allows you to easily remove the stone.
- Freshness: Look for dates that are soft and plump, not dry or shrivelled, for the best texture and sweetness.
Cheese: The Creamy, Herby Core
- Herbed Soft Cheese: I specifically chose a French Roule cheese with herbs and garlic for this recipe. Its creamy texture and vibrant herbal notes add a distinct dimension that truly complements the other ingredients. Other excellent choices include Boursin, an herbed goat cheese, or even a good quality cream cheese mixed with finely chopped fresh herbs like chives, parsley, or dill, and a pinch of garlic powder.
- Texture is Key: Ensure the cheese is soft enough to be easily spooned or piped into the dates. If it’s too firm, let it sit at room temperature for a few minutes to soften slightly.
- Flavor Exploration: Don’t be afraid to experiment with different soft cheeses. A plain cream cheese could be used for a milder flavor, or a blue cheese for a more pungent, sophisticated bite.
Prosciutto: The Salty Embrace
- Quality Prosciutto: Opt for thinly sliced, good-quality Italian prosciutto. Its delicate texture and salty, savory flavor are essential to this appetizer. The thinness ensures it melts in your mouth without being overly chewy.
- Cutting the Slices: Depending on the size of your prosciutto slices, you’ll typically cut them in half lengthwise, and then possibly in half again, creating smaller strips that are perfect for wrapping around the stuffed dates. The goal is to have enough prosciutto to elegantly encase the date without overwhelming it.

Assembling Your Elegant Appetizer: A Step-by-Step Guide
The assembly process for these prosciutto-wrapped stuffed dates couldn’t be simpler, making them an ideal choice for busy hosts. Here’s a detailed look:
- Prepare the Dates: Start by carefully cutting each Medjool date in half lengthwise and gently removing the pit. You’ll want to create two open halves that can be easily filled.
- Slice the Prosciutto: Unroll your prosciutto slices and, depending on their original size, cut them into halves or even quarters. The aim is to create strips that are long enough to wrap around the stuffed date halves once or twice. For standard slices, cutting them lengthwise and then crosswise often works best.
- Fill with Cheese: Take a small teaspoon (or a small dollop) of your chosen herby soft cheese and carefully place it into the cavity of each date half. Don’t overfill, as you need space to wrap the prosciutto.
- Wrap It Up: Gently take one of the prepared prosciutto strips and wrap it around the cheese-filled date half. The natural stickiness of the date and the cheese will help hold the prosciutto in place initially.
- Secure with Cocktail Sticks: To ensure the prosciutto stays perfectly wrapped and to provide an easy way for guests to pick them up, insert a cocktail stick or a decorative toothpick through the center of each date bite. These aren’t just practical; they also add a touch of style to your appetizer spread.
- Arrange and Serve: Arrange your beautiful bites on a serving platter. They are best served at room temperature or slightly chilled.
Tips for Success and Presentation
- Make Ahead: These dates can be assembled a few hours in advance and kept refrigerated until about 30 minutes before serving. This allows the flavors to meld beautifully.
- Garnish Options: For an extra touch of sophistication, consider a light drizzle of balsamic glaze just before serving, or a sprinkle of finely chopped fresh chives or pistachios. The contrasting colours and textures will make your platter pop.
- Serving Temperature: While they can be served chilled, allowing them to come to room temperature for 15-20 minutes before serving enhances the flavors and softens the cheese, making for a more enjoyable bite.
